Mini Pumpkin Pies

Pumpkin Pie is my favorite vegetable pie. It is easy to prepare and taste delicious. It is quite challenging though to make a good crust without gluten, sugar and butter. For this recipe I used flax seed flour, coconut flour and 2 tbsp of regular gluten free flour . I was really happy with the dough, came out easy from a baking form.

Ingredients

  • 2 tbsp of coconu flour
  • 1.5 tbsp of flaxseed flour
  • 1 tbsp of regular gluten free flour
  • 3 tablespoon of water
  • 2 tbsp of cononut oil
  • stevia sweetener ( I use 1 bag = 1g of mix sweetener Pure Via)
  • .
  • 425 g of pumpkin
  • stevia ( 3 g stevia sweetener Pure Via)
  • 1 tbsp of pumpkin mixed spieces ( cinamon, ginger, cloves, nutmeg)
  • 1 tbsp coconut oil
  • 1 egg
  • pinch of baking powder

Method

Step 1

mix all ingredients for dough together

Step 2

use a baking muffin form, add extra oil before placing crust

Step 3

put the crust into the oven for 10 minutes, 350 F

Step 4

prepare pumpkin mix and add it to the crust

Step 5

put pumpkin pies into the oven for 40 minutes, 350 F

Step 6

let them cool for 10 minutes

Step 7

enjoy :)
