Cod in Light Curry

Cod in light carry and coconut milk is an excellent choice for a dinner low in carbohydrates.  Prepare aromatic soup and serve it with fresh fish and some basil.

Ingredients

  • Cod fillet 540 g / 1.2 pound
  • 2 small green zucchini
  • 2 small yellow zucchini
  • red pepper
  • sweet onion
  • cane of cocnut cooking milk
  • cup of fish stock soup fish_stock
  • 1.5 tbsp of curry
  • 1 tbsp of salt
  • pepper

Method

Step 1

Slice onion and fry separately

Step 2

Cut courgettes and red pepper into slices and cook them on the small fire zucchini

Step 3

Put vegetables into a bigger pot and mix them with soup and coconut milk. Add curry, salt and pepper.

Step 4

Leave the soup on the stove and start to fry a cod.

Step 5

Put fish into a bowl and pour the soup. Serve with some fresh basil leaves. cod_in_curry_enjoy
