Avocado with Scorzonera

Avocado and Salsify Salad ( Scorzonera Salad) is a great idea for fancy appetizer. Scorzonera is a very valuable root which contains: proteins, fats, potassium, calcium, phosphorus, iron, sodium, and vitamins A, B1, E and C. Black roots include only 1.6 % of carbohydrates.

Ingredients

  • 3 avocados
  • 300 gram scorzonera
  • 1,5 lemon
  • teaspoon mayonnaise
  • teaspoon maple syrup
  • teaspoon olive oil
  • salt, pepper

Method

Step 1

Wash roots, peal them with knife and cut thin. 3

Step 2

Pour to the bowl glass of water and squeeze juice of lemon. As quick as possible put roots into bowl. They quickly change color to brown! Leave them for 10 minutes. 4

Step 3

Boil the water with lemon and cook scorzonera until soft.

Step 4

Prepare sause: squeeze half of lemon add 1 teapoon of mayonnaise, 1 teaspoon of maple syrup and one teaspoon of oil.

Step 5

Cut one avocado in small pieces and mix with the roots - this is our filling :)

Step 6

Cut in half 2 avocados. Fill them with the mixture. Pour souse, for decoration add balsamico, for taste salt and pepper.

Step 7

Enjoy.
